FUN FOOD FRIDAYS - BEYOND SAUSAGE AND PEPPERS RECIPE

I decided to kick off Favorite Food Fridays with one of my new favorite foods. Like most of us, I stockpiled groceries during the time we were all under stay-at-home orders. Grocery shopping was one of the few activities that I left my house for and so I wanted to make it as special as possible by trying new things. One of my assignments in my transformational leadership class was to embark upon a transformational project for 5 weeks. I chose to become more conscious in my eating, which for me meant incorporating more plant-based foods into my diet and also eating more fish. I discovered Beyond Meats and fell in love! So when I found out that they made Italian sausage, I decided to give it a try. The results were delicious! Read more for the recipe.

The ingredients needed are pretty basic to gather. You'll have to get a package of Beyond Sausage in either sweet or hot (I prefer hot). You will also need sliced peppers and onions. They don't need to be all the colors of the rainbow, but feel free to make the dish as colorful, or not, as you would like. You will also need a small can of tomato sauce and whatever seasonings your heart delights in. I used Italian seasoning, as well as Goya total seasoning and Goya's onion and garlic seasoning. But you can use whatever you have that works.

I began by slightly oiling a pan and then cooking the "sausage" with the lid on. Afterwards, I removed the "sausage" and transferred it to a plate where I sliced it. While I was doing that, I sauteed the peppers and onions in the same pan and added the tomato sauce and "sausage" back in once the vegetables were translucent. I like my veggies soft, but you can cook yours to whatever texture you prefer. That's it! I ate my meal with a piece of bread that I added a garlic seasoned butter to and popped in the oven. I made the garlic seasoned butter the fast way with just garlic paste, butter, onion powder and Italian seasoning. It was so good! I would highly recommend Beyond Sausage. It's pricey at about $10 for 4 links, but it tastes like the real thing!
